First, a little housekeeping:
Gina, the Fitnessista, is doing a great giveaway! You should check it out!!
Next on the agenda…food, glorious food!
Here is a collage of eats from the past few days:
Breakfasts:
Amazing cranberry apple butter oats from yesterday with a few tweaks:
- 1/2 cup oats
- 1/2 cup almond milk
- 1/2 cup water
- pinch of sea salt
- dash of vanilla extract
- craisins (phenom.)
- mashed banana
- cranberry apple butter
- topped with almond butter
Mastered. Perfection!
I believe this was a yogurt bowl with vanilla chobani, pumpkin flax granola, H2H and PB Puffins.
Truth be told, I have no idea what this mix was. It was some oats, raisins, probably more of the usual suspects and then topped with unsweetened applesauce.
This was a tasty bowl that began the cranberry apple butter revolution.
- 1/3 cup oatbran
- 1/3 cup almond milk
- 1/3 cup water
- pumpkin pie spice
- vanilla
- mashed banana
Topped with plain Chobani and cranberry apple butter
A simple bowl of PB puffins and almond milk.
Lunches:
…have included a LOT of this:
SOUP! I’m obsessed this fall. This is my homemade pasta e fagioli from the other night. Delish.
Vegan black bean soup from TJ’s. DELISH!
Side of grapefruit.
Hummus and veggies in a whole wheat pita
with an apple
and some pretzels.
Dinners:
I only have two photographed. I was eating out a lot while Hubbers was away.
Spinach, chicken, mushroom quesadillas were on the menu last night. I LOVE these. You can find the recipe here. I saw them on “Healthy Appetite” with Ellie Krieger on FoodNetwork a year or so ago and have made them several times. They never disappoint.
I also had Panera the other night after picking Hubbers up from the airport. I had a classic cafe salad and garden vegetable soup with whole grain baguette on the side.
This weekend, I had a “Colossal” Honey crisp apple. It took me a good 15 minutes to eat. Dang.
I went to a beautiful baby shower and was proud of my gift wrapping skills.I bought new shoes.
I went to TJ’s and found some new (to me at least) products:
Had to try that one right away. The verdict? Out of this world!!
We all know how this one turned out!
I’m back on the bandwagon! I went to a hot yoga class on Monday. It rocked my socks (or lack thereof) off! I sweat like a beast and definitely felt it the next day. I can’t wait to go back!
I ran a 5K on the treadmill on Tuesday: 27:30.
I ran 2.0 miles Wednesday: 18:30.
I am really missing the Nike+. I need a new one ASAP!!
Make it a great Thursday! The weekend’s almost here!
