I keeed, I keeed. I would never count down the days left of school ;) I treasure every moment! I really do.
There’s teach all ready to go on her first day! Seriously…a child. I have to say, I had a good first day. My students were excited to be there and so was I. It was great seeing my students from last year as big fifth graders! This morning I woke up early for some yoga. I did YD Power Yoga. It was a nice wakeup and a great way to start the day.
Breakfast:
I had some pumpkin-y oats. In the mix:
- 1/2 cup oats
- 1/2 cup water
- 1/2 cup almond milk
- 1/2 mashed banana
- 1 spoonful pumpkin butter
- cinnamon
- splash of vanilla
AM Snack:
CLIF mini bar – PB crunch
Lunch:
I made two mini caprese paninis on mini ciabatta rolls last night. They had fresh mozzarella, tomatoes, basil, balsamic vinegar, olive oil, salt and pepper. I also had grapes. I was full afterward, so I saved my apple for an after school snack.
Dinner:
I whipped up some free-range chicken marinated in balsamic vinegar, Italian seasoning, olive oil and one crushed garlic clove. I also threw together some Annie’s Alfredo shells. I made the “tangy” version with yogurt instead of milk. It was totally tangy. I think I’ll do half and half next time. I also had a salad of the usual: organic baby arugula, tomatoes, red onion and balsamic vinaigrette. Dessert was two TJ’s dark chocolate almond cookies. Oh and there may or may not have been a glass of Sauv. B. in there while cooking ;)
Tomorrow I’m going to try to do 5 miles before work. I’m not sure if I can do it! We shall see!
